Avocado on a bagel with lemon and salt

In case you were wondering where I have been the past while, please, allow me to indulge you. I have been pouring over Italian cuisine: a cultural history and sifting through The importance of a taste: A comparative study on wild food plant consumption in twenty-one local communities in Italy and reading all about wild thistle and King’s spear and other such foraged plants of the Sicilian landscape. My final term paper on Sicilian cuisine has gotten the best of me and I am losing my mind.
But, sound mind or not, a girl has got to eat. And when you are devoting the larger part of your brain capacity to what the ninth century Arabic invasion of Sicily meant for the island’s culinary identity, your meals have got to be simple. That’s why I made this avocado and lemon bagel for lunch the other day – it was simple. I knew that it would be simple and I figured that it would be tasty as well but what I was not prepared for was just how earth-shatteringly tasty it would be. I don’t mean to be dramatic but if you can even so much as tolerate avocados, please, go make this. Now.
Ingredients
1 whole grain bagel, toasted
1/2 an avocado, sliced
1/2 a lemon, juiced
1 pinch of sea salt
Directions
1. Toast up your bagel. The toastier the better for this.
2. If your avocado is nice and ripe, go ahead and spread it onto your bagel. If your avocado is not quite ripe yet, no worries. Just lay it on in slices.
3. Sprinkle a bit of lemon juice onto your avocado bagel and then a bit of salt.
I have been eating so much orange and brown food lately (pumpkin, squash, pasta) that I decided to have a salad with my avocado bagel. It was a plain and kind of boring salad, I admit, of romaine lettuce and cucumbers but it was, again, simple. And I am all about simple right now.

I love avocado and had never thought of eating it this way. It would be the essence of taste with just lemon and salt… yummy! Good luck on your schoolwork, very difficult and impressive sounding!
