Spicy black bean and jalapeños nachos

For the two (maybe three?) of you who read this blog when I first started it, think back to my nacho post. Yup, that one. Can you believe that was only five months ago? In just five months, The Starved Writer has grown so much. I may have just a handful of readers but I have watched my abilities in the kitchen, my photos and my writing grow. I have fallen in love with the world of food blogs!
In the past week or so, things have gotten busy around here – I had a photo accepted to TasteSpotting and I got involved with What I Ate Wednesday at Peas & Crayons. As a result, I have met lots of new people, learned lots of new things and found lots of new ways to do what I love. This blog has come a long way but there is so much yet to do! I can’t wait to see where The Starved Writer will take me.

Today, to pay tribute to where this blog started, I bring you more nachos. They may not be much healthier than the first ones I posted (come on, who was I kidding?) but they do show my change in tastes – black beans, mozzarella, jalapeños, yellow peppers, onions and nachos with flax seeds. (They are a step up from the Heinz baked beans and marble.) The jalapeños are nice and spicy, the yellow bell peppers are refreshing and almost cool and the flax seed chips give the nachos the hearty, whole-grain taste that I love. If you like nachos with a bit of spice, you will love these.
What do you put on your nachos? Any unique ideas?

Congrats on Tastespotting! I think you should just keep doing what you’re doing. But one can never have too many pasta recipes.:) I’m so biased, I know. I love the nachos.:)
The few pasta recipes that I have on The Starves Writer are shameful – especially considering how much pasta I eat! Haha! I will definitely start posting more pasta recipes. And lasagna. Definitely lots of lasagna to come.
These nachos look so great! You are doing a great job just by getting on Tastespotting! It takes time to develop readership, but with exposure like that, you’ll soon have a large and loyal following!
