Crispy quesadillas with avocado and mushroom

For most of my life I have disliked mushrooms. Strongly.
However, I have slowly begun to incorporate them into my cooking: Portabella burgers, button mushrooms in omelets, on pizza – that sort of thing. Tonight I had a mushroom and avocado quesadilla, courtesy of Megan at Cooking Whims.
It was crispy, cheesy and loaded with the flavour of the avocado and mushrooms!
My only changes: adding a 1/4 cup to a 1/2 cup of chopped, white onion. Also, I cooked the mushrooms, avocado and onion in a bit of oil before putting them into the quesadilla.
This is the perfect weeknight night meal for when you’re in a hurry but still want something tasty and healthy.
UPDATE: I have found that the softer, riper, more spreadable the avocado, the better!

I totally know how you feel about mushrooms! I’m going through the same thing. I thought I hated them my whole life but I’m kind of rediscovering them and they are appearing in all sorts of things! I think we’ll definitely give this quesadilla a try because avocado is the best.
